Broiled Salmon with Cucumber Feta Salad

 

This healthy, easy weeknight meal of tender broiled salmon with creamy yogurt feta cucumber salad comes together in under 30 minutes!


 If you're looking for an easy, healthy weeknight meal, look no further! This is a good old standby that comes together in less than half an hour and everyone loves. Eat it keto/low carb or add some rice or crusty bread on the side. 
 
This cucumber salad is ADDICTIVE. It's the perfect combo of crunchy, fresh, and creamy. 
 

 

How do you cook salmon in the oven without drying it out?

 
The best way I've found is to broil it on high for 20 minutes. That pretty much always does the trick perfectly. When in doubt, stick a meat thermometer in there and make sure the center reaches 145ºF. 
 
When you broil, you get an intense heat radiating from the top of the oven which gives you a nice crispy, golden top with deliciously charred lemons without overcooking the tender inside of the salmon.
 


Can I make the cucumber feta salad ahead of time?

 
Yes! I would say it's probably at its peak after marinating for a couple hours, but it's great eaten right away fresh and can stay in the fridge for 2-3 days. 
 
 

 

What to serve with this meal: 

 
In my book, this meal is great just on it's own, but you can definitely add a carb like rice, quinoa, couscous, mashed potatoes, or crusty bread!
