Life is sure crazy around here with three toddlers, a big
bathroom remodel, not to mentions wildfires, October snowstorms, and just the general
2020-ness of life lately.
BUT, you know I couldn't let you get away without at least ONE pumpkin recipe
before October is over.
This pumpkin bread really is so simple and great. I always make it in one
bowl, not counting the little dish I use to mix up the cinnamon and sugar to
make swirl inside and the crispy, sparkly topping.

cinnamon swirl zucchini bread recipe
from a few years ago.

- Preheat oven to 350ºF.
- Mix together eggs, sugar, oil, and vanilla. Add the flour, salt, soda, powder and spices into the bowl on top of the wet ingredients and mix the dry ingredients together in the same bowl before mixing them into the wet ingredients. Stir in the pumpkin.
- Combine the 1/4 cup white sugar and 1/2 tablespoon cinnamon.
- Pour half the batter into a liberally buttered loaf pan (I lined mine with foil and then greased the foil for easy removal). Top with all but 1 tablespoon of the cinnamon sugar mixture. Dollop on the remaining batter and smooth to cover cinnamon sugar. Swirl the batter a little with a knife. Sprinkle on the remaining cinnamon and sugar. Bake for about 1 hour and 15 minutes or until a toothpick comes out clean.
Yield: 1 loaf
