Pesto Chicken Salad on Pretzel Buns

Okay, this is the last time I'm doing a pretzel based post (for a few days at least).

Seriously though, I have a beautiful cake coming your way sometime this week, so don't worry. Unless you're worried about eating the whole thing and getting fat. But even then, as Cookie says, "The big ones are the hot ones".

Well, she was talking about scrambled eggs, but I think that statement applies to everything. And everyone.

Anyways, these sandwiches are pretty simple. I made them when my grandma and her friend came over the other day. They pretty much died.

Just kidding, they're fine.

Pesto Chicken Salad on Pretzel Buns

Pretzel Buns (recipe here)
Cooked and cut chicken (I just boiled some chicken tenders)
Lime juice
Kosher salt

Toss the chicken in enough pesto to coat. Slice the avocados very thin (I'll give you a tutorial someday for that) and toss in a little lime or lemon juice to prevent browning and sprinkle with salt. Slice tomatoes thin.  Layer the chicken, avocado, and tomato on the bun. Enjoy.
