Brownie Cupcakes with Cookie Dough Frosting


Guys guys guys! Guess what today is!

It's my blog's first birthday!


It seems like yesterday that you were born, my little bloggy. I remember sitting down among all my dirty scraps of paper with recipes scribbled on them. No titles. No commentary. No photos. I couldn't even tell what half of them were supposed to be for. And I said to myself, "That is it. I must get organized."

And then this happened.


 I think we've seen a lot of progress in the first year here. I would like to think that at least my photography has improved a little since my Canon Powershot days, as seen in this Nutella Marbled Banana Bread post or this Brown Butter Fudge Cake post. They look pretty bad, but I can assure you THEY WERE NOT.

Also I've ensnared quite a handful of followers. Almost 500 of you on my Facebook page. And 630 of you stalk me on my favorite Pinterest board. I just feel so popular.


 Really though. I feel so accomplished for having stuck with this for so long. Usually I flit between ideas and projects like a squirrel on a sugar high with ADD.


 

Do you want to know why I've stuck with this for so long? It's because of you. If ever I have a crappy day, I love reading all of your awesome comments and emails. You guys are always there when I need a self-esteem boost. So thank you. And I look forward to sharing fattening recipes and disturbing stories with you for many more years to come!

And um... these cupcakes are awesome. I mean, cookie dough on top of brownies? Yes. Please.







Brownie Cupcakes with Cookie Dough Frosting
Makes 1 dozen

For the Brownies: 
1 stick butter
1 cup brown sugar
1/2 cup cocoa powder
1/2 tablespoon vanilla
2 eggs
1/4 teaspoon salt
1/2 teaspoon baking powder
3/4 cups all-purpose flour
1 cup chocolate chips

Preheat oven to 375ยบ. Line muffin tin with greased foil cups (regular paper cups would probably work fine too).
Melt the butter in the microwave in a large, microwave safe bowl. Add the sugar and microwave for about one minute. Whisk well.
Whisk in the vanilla and eggs.
Mix together the salt, baking powder, cocoa powder, and flour. Add to the rest and stir well.
Fold in the chips.
Bake in muffin tin for about 7-12 minutes (I overcooked mine a tad. Next time I'll try 7 minutes because I like them gooey-er). Allow to cool before frosting.

For Cookie Dough Frosting:
1 stick softened butter
3/4 cup brown sugar
1 teaspoon vanilla
1 cup flour
1/2 teaspoon salt
4 tablespoons milk
1 cup chocolate chips

Beat the butter and sugar until fluffy. Add the vanilla and beat well. Stir in the flour and salt until doughy. Stir in the milk and beat until fluffy. Fold in chocolate chips. Frost cooled brownies. Also, we like them refrigerated so the frosting is cold and a little harder, but that's up to you.
