Candy Cane Kiss Brownie Bites


I consider myself a happy person.


I mean, I'm happy pretty much all the time. The secret is finding joy in the simple things in life. Like opening Grandma's freezer to find every flavor of ice cream ever invented at your immediate disposal. Or walking over to the diner to get a burger with Dad and laughing at the tacky Christmas decor including a nativity scene in which somebody mixed up Joseph and one of the wisemen so that Joseph is standing way out on the edge of the whole party and the wiseman is over in the stable creepin on Mary. Or when Nemo and I drive down the road blasting The Phantom of the Opera soundtrack loud enough for eleven continents to hear and singing like there's no mañana. Or the moment when I pop one of these candy cane kisses in my mouth.


See, if you just savor these things, you will always be happy. Like me.


But um, speaking of Candy Cane Kisses, you should probably make these brownie bites. I mean, since you're on the pursuit of happiness and all that. Cause they're that good.

And make sure you eat 'em up fast because that gooey center isn't gonna stay melty forever.

Seriously though, I don't think that's gonna be a problem for you.


Candy Cane Kiss Brownie Bites

2 sticks butter
2 cups brown sugar
4 eggs
1 tablespoon vanilla
1 cup cocoa powder
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup chocolate chips
1 bag Hershey Candy Cane Kisses

Preheat the oven to 375º. Melt the butter and the sugar in the microwave or on the stove until the mixture is bubbly. Whisk well. Add the vanilla and then the eggs, one at a time and whisk until smooth. Mix together the flour, cocoa, baking powder, and salt and then add to the rest, mixing until combined. Fold in the chocolate chips. Bake in lined mini muffin tins about 9 minutes. Press the kiss into the top. I like the kiss to melt, so I put it really far in. Once it's pretty melted, I just give the tip a little push down into the puddle.
