Oreo Brownie Cupcakes




As you may recall, I have a sister named Piggie. Yes, that is her name. You may not take her for a Piggie at first. She looks more like an Abberlooski. But if you hang around her long enough, you will understand.



She just doesn't like healthy food. That's it. She's picky. But if you get her around something she can't stay away from, like oreos, brownies, or Little Ceaser's cheese pizza, then watch out.

But then, pigs don't like healthy food either, do they? I mean, don't they just eat brownies and stuff? I don't know. I've never fed pigs. But anywho, that just confirms what I'm saying. Piggie is a pig.

Yesterday I did a test. A self control test. Piggie had just eaten almost an entire Little Ceaser's pizza for dinner. Now she was sitting on the porch reading. I took one of these Oreo brownies out to the porch and then walked away, shutting the door behind me, leaving the Piggie and the brownie in private. I set my timer for one minute.

The seconds ticked away.

After about 26 seconds, she burst inside and screaming, "Yammie!! What, are you trying to kill me??? You can't leave me alone with Oreo brownies at a time like this!"

The crumbs on her face told the rest of the story.

"Really? The whole thing?" I asked, impressed.

"Yes." she replied, her eyes twitching in her frenzy.

"Well, congratulations then! You win the test!" said I, "You are indeed The Piggie."


Oreo Brownie Cupcakes

Makes about 2 1/2 dozen

Brownies:

2 sticks of butter
2 1/4 cups sugar
1 1/4 cups cocoa powder
1 tablespoon vanilla
4 eggs
1/2 teaspoon salt
1 teaspoon baking powder
1 1/2 cups all-purpose flour
About 20 double stuf Oreos, crushed
1 cup chocolate chips

Preheat oven to 375ยบ. Grease muffin tins well.
Melt the butter in the microwave in a large, microwave safe bowl. Add the sugar and microwave until the sugar is dissolved, but not bubbling.
Whisk in the cocoa powder, vanilla, and eggs.
Mix together the salt, baking powder and flour. Add the the rest and stir well.
Fold in the chips and Oreos.
Fill muffin tins 3/4 full. Bake for about 17 minutes. Run a knife around each one when you get them out. Let them cool before you remove them.

Cream Cheese Oreo Frosting:

8 oz. softened cream cheese
3/4 cup softened butter
3-4 cups powdered sugar
About 20 double stuf Oreos, crushed

Beat together the cream cheese and butter. Add the powdered sugar half of a cup at a time until desired consistency is reached. Fold in Oreos.

Top frosted brownies with mini Oreos.
