Cranberry Orange Scones


Well, I was going to write a post about yesterday which was the WORST DAY OF MY LIFE. I was going to tell you about the hours and hours I spent trying to make photos for our Christmas cards which I ended up throwing away cause they were so DUMB. I was going to tell you about the cookies I burnt and about the bread that didn't rise. I was going to tell you about my cold which is making my face explode. I was going to tell you about how Dad laughed at me when I almost DIED when I swallowed an entire cough drop whole. I was even going to tell you all of the gruesome and disturbing details of this sinus rinse kit that pretty much is the only thing between me and the grave. But then I was like.... uh, nobody wants to hear about that. Even I don't want to talk about the sinus rinse. Shudder.




But! There were also good things about yesterday. And whenever one has a day full of crappiola, one must always find good things to smile about. You always can if you let yourself. Always always.

So, let's see. First of all, I finished ordering all of my Christmas presents online (including one for myself). And now I'm feeling 89% less stressed out and totally ready for Christmas. I also got a Frosty at Wendy's with Piggie and Tay. I do that a lot of days (read: every single day of my life) but one always must appreciate the small things. And third of all, my hair was totally awesome. You can never be truly unhappy on a good hair day. Fact of life.


Yesterday should have started with these scones. I feel that the entire day would have been completely different.


These scones are really moist and almost cakey. They spread out a little on the pan so they don't stay perfectly triangular, but that is a price I willingly pay. but Also, don't feel like you have to use demerara sugar. It gives them way more crunch and deliciousness and a perfectly crunchy and caramelized bottom. But if you don't have it, regular sugar will work fine. You can't really go wrong with cranberries and oranges. If you like these, you'll like these cranberry orange cream cheese crumb bars even better. Really.


Cranberry Orange Scones

1 cup flour
1/2 tablespoon baking powder
1/8 teaspoon salt
4 tablespoons sugar
5 tablespoons butter, softened
2/3 cup sour cream
1 tablespoon orange juice
1 cup fresh cranberries
1 tablespoon orange zest
Demerara sugar (or regular white sugar)

Preheat oven to 425ºF.
 Mix together the flour, baking powder, salt, and sugar. Cut in the sour cream and butter with fork until well combined. Mix in the orange juice just until combined. Add the cranberries and zest.
Sprinkle a clean surface with demerara sugar. Wet your hands slightly so they don't stick to the dough. Put the dough on the sugared surface and press into about an 8 inch circle. Sprinkle the top with more demerara sugar and then cut with a pizza cutter into about 8 triangles, like a pie.
Place scones on a cookie sheet lined with parchment paper.
Bake for about 15 minutes or until lightly browned.


Now have a GOOD DAY.

  1. What type of flour should I use to make these gluten free? Can I just use, say brown rice flour or do I need a gluten free mixture? PS I love your site! I have made many things and all of them have been fabulous!!
