Blueberry Bagel French Toast with Cream Cheese Glaze


You guys won't even believe this, but I really didn't mean for this to be Fourth of July themed. It sort of turned out to be red white and blue though, so in case the cream cheese glaze and buttery bagel goodness didn't already convince you, now you really have no excuse not to make this tomorrow.


I don't even know if I actually made this up or saw somebody making bagel french toast on Pinterest before, but if you're the random person out there saying, "Hey, that girl stole my french toast bagel idea!" Then I apologize profusely. You have to admit though, it's sort of an obvious thing to do. I mean, when it's time to make french toast in the morning and you look over all the choices of squishy bread, a blueberry bagel is sure to catch your eye and steer you away from the path of the boring and unexceptional. At least that's what happened to me.




    • Blueberry Bagel French Toast with Cream Cheese Glaze

    • 2 blueberry bagels (or whatever kind you want)
    • 1 egg
    • 2 tablespoons heavy cream (milk would also work)
    • 2 tablespoons brown sugar
    • 1 teaspoon vanilla
    • 1/4 teaspoon cinnamon
    • A few tablespoons of butter
    • Cream cheese glaze (recipe below)
    • Berries and powdered sugar for garnish (I used currants and mulberries)

    • In a shallow dish, whisk together the egg, cream, brown sugar, vanilla, and cinnamon. Soak each half of a bagel in the mixture until you've soaked up as much as you can. Fry them in the butter on the stove on about medium heat. Top with cream cheese glaze, powdered sugar, and/or berries.

    • For the cream cheese glaze:
    • 1/4 cup cream cheese
    • 1/4 cup butter
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla
    •  
    • Mix all the ingredients and microwave for 45 seconds or until warm.
