Waffle Biscuits and Gravy



Okay, so maybe you guys are starting to get freaked out by all my outlandish waffles. I mean first chili and cornbread waffles and now biscuit waffles? Just when you thought I couldn't get any weirder. How dare you doubt me.


Besides, if you had this super awesome 1400 watt, brushed stainless steel, non-stick coated, restaurant style Waring Pro Belgian waffle maker that makes TWO waffles at a time maybe you would make everything you see into a waffle too.

Seriously, get it. I'm in love. 


And don't judge my love by how dirty I keep my little darling. I just love him so much, I see past all the crumbs and grease. All I see is his heart of golden waffles within. 

Now I'm going to stop talking about waffles for one and a half seconds so I can tell you about the sausage gravy. Being a Northerner, biscuits and gravy are always quite a treat whenever we go on expeditions into the South. But luckily for us, the Northern folk are starting to catch on and I've had the pleasure of feasting on biscuits and gravy even all the way up in da U.P. (excuse my Michiganese, I refer to the Upper Peninsula).

To make your gravy, start out with some sausage. I just used Bob Evans Original Pork Sausage.



Cook it up and dump in some flour.



Don't drain the grease. We love calories. Yum yum.



Now some add some milk.



Then continue cooking until thickened.



So that only took about twenty milliseconds. Now just throw it on your waffle biscuits. The end.



Waffle Biscuits and Gravy

For the Sausage Gravy:
16 oz. sausage
1/4 cup flour
3 cups milk
Black pepper to taste

Cook the sausage until browned. Add the flour and stir until well combined and continue cooking for about a minute. Add the milk and continue cooking and stirring until thickened. Add more milk if it gets too thick. Add pepper to taste. Reduce heat to low and simmer until ready to use.

For the Biscuit Waffles:
(makes about 4 waffles in my big waffle maker)
2 cups flour
1 teaspoon salt
4 teaspoons baking powder
1/4 teaspoon baking soda
4 tablespoons cold butter
1 1/2 cups buttermilk

Combine the flour, salt, baking powder, and baking soda. Work the butter in with your fingers, leaving it in pretty big pieces. Add the buttermilk and stir just until combined. Cook according to waffle maker instructions. Serve with gravy.
