I accidentally messed up and...This was really good! I accidentally messed up and used 1/2 tsp of cornstarch instead of 1/2 tsp of baking powder for the cake portion (I didn’t realize it until it was too late) and it still came out tasting awesome! The top is crunchy and sweet which pairs perfectly with the cake. I didn’t have an 8x8 pan but I used two silicone Epicure baking pans and it came out as two loaves. Will definitely make again! I've been searching for yea...This is FABULOUS. I've been searching for years for a really great coffee cake recipe and this is The One. I used some little windfall apples from a tree that fell over and they worked beautifully. I can see making this with pears as well (I have both pears and apples in my garden) I followed it exactly and the cream cheese layer is delightful and there's plenty of streusel topping (which is really sweet and that's fine) which gives it good crunch and doesn't get soggy. I'll be making this for years to come. it's my go-to now. The only thing I would change is to add more cream cheese mixture in the middle, that layer seemed a little thin. It could be that it was a dryer cake b/c of the coconut flour, the next time I will try it with almond flour.
