The Easiest Shrimp & Noodle Stir Fry {Naturally Gluten Free}

Today I am FINALLY sharing a recipe that I have been telling all of my real life friends and family about for a long time.

I am always raving to everyone I meet about the perfect harmony of the flavors of chili, sesame, garlic, and ginger. The beautiful texture of the caramelized fried noodles with the juicy shrimp. 

It's so simple to make! It's so easy to keep all the ingredients on hand at all times! It really only really dirties one pan! Well, when I finish, panting and out of breath with excitement, they are always bound to ask for the recipe. No, not a squirt of this and a handful of that, a RECIPE. 

Well here I am, finally here with your recipe. 





I have always lamented that there's no such thing as a truly 30 minute meal. I'm sorry, Rachael Ray, but I don't have workers behind the scenes to cut up all my ingredients and clean up all my pots and pans. 

One day I decided that a 30 minute meal can be a thing... in fact, even less than 30 minutes! You don't have to chop anything or dirty a million pans. You don't need any other sides. This one pan has it all. 

Since I first started making this recipe a few months ago, I have always made sure to keep all the ingredients on hand. I always have the noodles and sauce ingredients in the pantry and shrimp and some veggies in the freezer (sometimes I just use a frozen stir-fry veggie mix!). It's the perfect meal for when I get busy with something or get back from shopping and realize it's already 6:00 and I'm suddenly STARVING TO MY ACTUAL DEATH (I can be a little overly dramatic about it when I'm pregnant, you know). Now I always have this as a backup meal that I can whip up in no time!

    • The Easiest Shrimp Noodle Stir Fry
    • Serves 2

    • 4 oz. Thai Stir Fry Rice Noodles 
    • 2 tablespoons sesame oil (you can also just use vegetable oil or a combination of both)
    • 6 oz. shrimp (thinly sliced chicken or steak are great in this too)
    • 4 oz. snow peas (or other veggies, a frozen stir fry mix works great too!)
    • 1/4 teaspoon garlic powder (or 2 cloves minced garlic)
    • 1/4 teaspoon ground ginger (or 1 tablespoon fresh ginger)
    • 1/3 cup brown sugar
    • 2 tablespoons rice vinegar
    • 1 tablespoon soy sauce (if you need it to be gluten free, make sure you get a gluten free brand like this one)
    • A squirt of Sriracha sauce (add more if you like it spicy!)

    • Optional toppings:
    • Cilantro
    • Green onions
    • Sesame seeds
    • More Sriracha sauce
    • Fresh lime juice

    • Cook the noodles according to the package directions and set aside. 
    • Heat the oil over medium-high heat in a large frying pan and add the shrimp and peas. Cook until the shrimp starts to become opaque. Add the cooked and drained noodles, garlic, and ginger and continue frying for a minute. Add the brown sugar, rice vinegar, soy sauce, and sriracha and continue frying for a few minutes or until the sugar begins to caramelize. Top with desired toppings and enjoy!
